Are these genuine Apple iPhone X displays?

Yes. Every panel is an original Apple part, not aftermarket. On glass changed units we relaminate new glass onto the original Apple panel, so True Tone and auto brightness carry over.

Which iPhone X models can I buy here?

What is the difference between glass changed and touch and flex replaced?

Glass changed means we removed the cracked cover glass and relaminated new glass with fresh OCA on the original panel. Touch and flex replaced means the original panel with a new digitizer and flex. Both keep the original Apple panel.
